From Sunday Winemakers consists of three friends who met at university; winemaker James, viticulturist Sam, and brand guru and business man Dave. Producing different series of wines across Australia, their philosophy is simple - farming sustainably and mostly organically, removing and adding as little to the fruit as possible and using science to try and understand nature to make something vibrant and exciting and representative of the site and the vintage. These are the wines they talked and dreamt of making over late night sessions at university – weird blends, unconventional winemaking techniques and experimental batches. These are the wines they like to drink, wines with a conscious that are made to be enjoyed.

Orange, New South Wales
A brilliant “Orange” wine from, er, Orange in New South Wales. The Carbonic Maceration (dumping grapes in a big tank, sealing it and starving it of oxygen means that each berry becomes its own fermentation vessel) gives this normally white wine extra tannic structure, but the process is a bit like gently simmering a brilliant broth, for two weeks, and the resulting wine is delicious, rich and very approachable. The beautiful bronzey hue comes from the skin contact during the carbonic maceration. Pinot Gris may commonly be a white wine, but the skins are in fact a lovely soft mauvey pink.
Wonderful aromatics with dried apricot and russet apple, seared orange peel, blackcurrants and a mouthcoating waxy feel. There's an interesting grip and hint of tannin to it (again, from the magic skin contact.) Would pair wonderfully with asian dressings and umami flavours.
From Sundays brings a winemaker and viticulturist (Sam) together with branding guru (Dave) together to make some truly epic Aussie wine. The combination of top rate minimal intervention wine making, the best fruit in South Australia from organically farmed sites and killer packaging combines into some of the most exciting wine to come out of Australia today. And it’s not exactly a static market!
Murray Darling, New South Wales
Peach puree, ripe pear and apple sherbet. Australia’s answer to Prosecco! But don’t call it that, otherwise the Italians will get upset. So Palloncino it is instead - the Italian for the sound of the pop of a balloon.
This is just the same grape as Prosecco, 100% Glera, from an organically farmed vineyard in Murray Darling, New South Wales. Gently pressed, the free run juice fermented in stainless steel. This isn’t a charmat method fizz - they instead use a state of the art carbonation machine on bottling, injecting CO2 in to each bottle. Sealed under a crown cap, this is a real winner - plenty of ripe stone fruits, pear puree and bubbles to dive into. 15g/l dosage, and just 9% alcohol.
Murray Darling
The official blurb states:

But that sounds like it is written by a robot born in the Summer of 2021 who has never known sunshine!! We say:
This wine is Fresh Prince’s Summertime in a glass. Tastes like fruit salad (the sweet and the dessert), makes like happiness with everyone it touches.
It’s a fun wine which was badly missing some sunshine this summer, so with a last (only) week of sunshine coming this week let’s get it flowing.

In the bottle we have high quality Pinot Gris grapes, 2 days on skins for some colour and texture. Infused with apple, lime and orange oils. Carbonated. Simple!
Hunter Valley, New South Wales
Nekter best selling red, hands down! The label here of this blend depicts viticulturist Sam, whilst the pairing Pinot Grigio depicts his wife Tenille! Wines for fun times, anytime.
Syrah and Pinot Noir may not be the most commonly blended grapes, but actually, it has quite a history in Australia. The richer Syrah, with dense fruit and spice is offset with the delicacy and acid tones of Pinot Noir, guaranteeing a real crowd pleaser. A delightful supple red, that's even better when lightly chilled. Plums, black cheries, a touch of muscovado sugar and balsamic strawberries. Silky tannins - a total juicy drop!
