Red Wines

The red wines we've listed all have a common theme.  Rich powerful tastes associated with the New World (you'll find lots of big and bold black fruits with notes of cocoa, espresso and liquorice) - but they will surprise you.  They have secondary notes you won't expect.  We've got some balsamic, some dried herbs and some crushed red pepper. 

 

This is the vanguard of the new wave of South African wine, and if you like red wine, you've come to the right place.

A blend of Syrah, Carignan and Mouvedre, the Paserene Union is named for the union between the swift - (winemaker Martin) and the girl (Mother Nature) - and their bond in making this wine.

A n expressive wine with each variety bringing different components to the wine. The Syrah vineyard is planted on extremely poor arid soils, yielding just small amounts of exceptionally concentrated fruit with intense, dark fruited flavours, whilst the Carignan and Mouvedre bring more perfume and pretty high toned notes. A multi layered wine - currants and orange peel, bruised sage and thyme, truffle and pencil lead. Dense and full bodied, but still very pure, with high notes of redcurrant jelly and cola nuts. No hurry to drink this one and pair with game or rich, slow cooked meat dishes.

Paserene is the passion of winemaker Martin Smith (formerly of Vilafonté and now dedicating his time to Paserene).  He currently produces 5,000 bottles a year – the excellent Chardonnay and a stunning Bordeaux red Blend.  Two more wines are promised from this excellent vineyard – a Syrah (which has been in barrel for over three years now) and a Cabernet Sauvignon, both of which promise to be exceptional.

Paserene have taken a best of breed approach and have multiple parcels of land which enables them to cherry pick the very best condition to make excellent grapes for the wines they want to make. The White Wine grapes come from Elgin, a region prized for it’s combination of altitude and cooling breeze from the Ocean, just 7.5 miles away.  This lower temperature makes for a slower and more gradual ripening, leading to more balanced wines with great depth and flavour.
